Beetle Bailey's remodels in Culver

The newly remodeled Beetle Bailey's restaurant, owned by Carolyn "Punky" and Jerry Baggett, has doubled its size, insuring lots of seating and including outside patio seating.
A drive-through window has also been added.
Punky Baggett said the remodeling started in October 2006 and final touches were done in January of this year. She owned and operated Tastee Treat in Prineville for 10 years. With the purchase of Beetle Baileys in June of 2005, she brought 40 years of restaurant experience with her.
Along with employees Penny Scarborough, who has worked with Baggett for eight years and Nicky Koenig, employed for three years, the owners said they prepare foods from scratch "like in the '50s ... we use no prepackaged foods."
Their homemade touch includes soups, chili, specialty salads, sauces, hashbrowns and biscuits. She also said they use transfat-free oils and have been doing so since before it became popular.
"This is a great community and I'm happy to be back in my own area," she emphasized.
Beetle Baileys is open for breakfast, lunch and dinner from 7 a.m. to 7:30 p.m., seven days a week. They are located at 403 W. First St. in Culver and you can place orders at 546-8749.
