Portland-based Aviation American Gin released five new cocktails that are bound to have folks forgetting their elementary-level math skills, let alone the never-ending digits of pi.

Portland-based Aviation American Gin released five new cocktails that are bound to have folks forgetting their elementary-level math skills, let alone the never-ending digits of pi. 

These pie inspired drinks are an homage to the March 14 holiday, stealing flavors from the beloved banana cream pie to the tart key lime pie. 

Pi, the little Greek symbol that looks like a two-legged stool, is a mathematical concept representing the ratio of a circle’s circumference to its diameter.

The first three digits of pi, an irrational number that’s decimal representation goes on forever without repeating, starts with 3.14, corresponding to the date March 14, now celebrated as Pi Day.

Here’s a few recipes to stir up the celebration: 

She Put the Lime in the Coconut 

Description: “It’s like Key Lime Pie got drunk on spring break, took a trip to the tropics, and decided to never come home.”

Ingredients: 

  • 1 ounce Aviation American Gin
  • 1/2 ounce Smirnoff Whip Vodka
  • 1/2 ounce lime cordial
  • 1/2 ounce Key Lime Concentrate
  • 1/4 ounce coconut puree
  • Garnish with whip cream and graham cracker

Under the Greenwood Tree

Description: “It’s fruity, it’s tangy, it’s sweet — but not in a ‘texts you 17 times in a row’ kind of way.”

  • 1 ounce Aviation American Gin
  • 1/4 ounce Krogstad Aquavit
  • 1/4 ounce Liquor 43
  • 3/4 ounce lemon juice
  • 1/2 ounce rhubarb Syrup
  • 1/4 ounce strawberry Syrup
  • Garnish with lemon wheel

Garden Party

Description: “Berries. Booze. A hint of something herbal that makes you feel like you’ve been personally invited to a fancy garden party where people say things like, ‘Notes of earthiness’ and ‘Ooh, is that Cynar?’”

  • 1 ounce Aviation American Gin
  • 1 ounce lemon juice
  • 1 ounce marionberry Syrup
  • 1 ounce simple syrup
  • 1/6 ounce Cynar
  • Garnish with mint sprig

Description: “Like the lovechild of a banana split and a boozy milkshake—if that kid went to culinary school and learned how to make cocktails that taste like actual dessert.”

  • 1 ounce Aviation American Gin
  • 1/4 ounce crème de cacao
  • 1/4 ounce crème de banana
  • 1 ounce coconut milk
  • 1/4 ounce vanilla simple
  • Garnish with cold foam and banana chip

Ube All Day

Description: “Bright purple, creamy as heck, and full of subtle sweet potato-ube magic that screams, ‘I’m unique and I know it.’”

  • 1/2 ounce Aviation American Gin
  • 1/2 ounce Escubac
  • 1 ounce Coconut Monin Syrup
  • 1 ounce coconut milk
  • 1/2 teaspoon ube extract
  • Garnish with boba straw
