For Salt & Straw fans, the unexpected is always expected — at least when it comes to ice cream.
They tell the vanillas to scoot over for the olive oil; black olive brittle and goat cheese; roasted peach and sage cornbread stuffing; and cheesy potato casserole ice cream flavors.
But, Tyler Malek, co-founder of Salt & Straw, is giving a shoutout to the more refined palates, with his forthcoming cookbook, “America’s Most Iconic Ice Creams: A Salt & Straw Cookbook,” releasing on Tuesday, April 29.
Co-written with James Beard Award-winning food writer JJ Goode, it features Salt & Straw’s hot takes on the country’s most famous flavors alongside buying tips, techniques and ingredient context for any level of home cook to learn from.
To celebrate the book launch, Salt & Straw is offering free scoops at all scoop shops with the purchase of the book on Tuesday, April 29, and will launch its “The Cookbook Series,” highlighting flavors from the book, making this Salt & Straw’s first Tuesday menu release ever.
Here’s a taste of what flavors will be featured at scoop shops:
- Vanilla Custard with Butterscotch Swirls
- Chocolate Chili Crisp Peanut Butter Cups
- Strawberry Tres Leches
- Matcha Matcha Man
- Coffee Chamomile Sherbet
As part of Malek’s cookbook tour, he will celebrate with several Portland events during May, including:
Wednesday, May 7, at 5 p.m. or 8 p.m.: Ice Cream Collaboration Dinner at Republica, 100 N.W. 10th Ave., Portland.

Copies of the cookbook can be found “wherever books are sold,” according to a news release. It is available for preorder now ahead of its Tuesday, April 29, release date. Salt & Straw released a cookbook in 2019 teaching readers how to master its beloved flavors.
Salt & Straw was co-founded more than 13 years ago by cousins Tyler and Kim Malek. The goal was to create small-batch artisanal ice creams using the best possible ingredients. Started in Portland, the ice cream company now spans the country with dozens of scoop shops.
