Changing lives one cupcake at a time….
Every Saturday, at the Beaverton Farmers Market, you will find Sarah Bellum's Bakery & Workshop selling scrumptious, frosting-topped, melt-in-your-mouth, cupcakes. And while buying a tiny taste of heaven is appealing enough, the money you just spent is also going to a good cause!
Dr. Rik Lemoncello, Associate Professor of Speech-Language Pathology at Pacific University in Forest Grove, earned his PhD from the University of Oregon in 2008. Interested in supporting adults with brain injuries, the self-taught baker founded Sarah Bellum's Bakery & Workshop in 2017. With help from graduate students in Pacific University's speech-language pathology program, four bakers, each with brain injury, baked, decorated the cupcakes then sold their creations at farmers markets.
Named Sarah Bellum as an acknowledgement to the word cerebellum, the bakery features seven cupcakes: carrot-coconut, chocolate-salted caramel, iced vanilla latte, lemon-blueberry, lime-coconut, pumpkin-spice, and Red Velvet. Gluten-free and vegan options are available.
