SLIDESHOW: A new home for Chuckie Pies
Chuckie Pies owners Chuck and Lisa Shaw-Ryan have become the latest retail tenants to open in The Windward, relocating their New York/Neapolitan-style wood-fired pizzeria from Fifth Street to the new mixed-use development in downtown Lake Oswego.
Friends and family gathered for a preview party last week at the restaurant's new location at 370 First St., which is nestled at the First Street end of The Windward's east-west pedestrian walkway.
"We think of the Chuckie Pies experience as hosting a dinner party every night" Lisa Shaw-Ryan said. "That's a big part of who we are. We put our heart out on a plate and demonstrate that love with a sense of fun and conviviality. I never want the choices to be complicated, just tried-and-true delicious with a few surprises thrown in."
The new larger space will allow more guests to enjoy Chuckie Pies' pizzas, salads and cocktails, and the Shaw-Ryans' signature brand of hospitality. According to Lisa, the foot traffic and visability of the new location has already proved to be beneficial, bringing both new and old faces to the restaurant.
Chuckie Pies' menu includes classics like Margherita, Spicy Sausage and Pepperoni pies, but customers can also delve deep into the Neapolitan style with creations like the White Pie (olive oil, ricotta, parmesan, sea salt, oregano, mascarpone and balsamic drizzle) and the Greek Pie (olive oil, mascarpone, feta, kalamata olives, artichoke hearts, oregano and fresh garlic).
Shaw-Ryan's handmade pizza dough is also used to make crackers for charcuterie platters, the bread for lunch items and cinnamon rolls for a Saturday coffee counter, which will be coming soon.
"I love exploring how flavors work together. Every item on the menu is pleasing to the palate. That goes for the salads, new meat-and-cheese pairings, and expanded dessert offerings too," Shaw-Ryan said. "That same thoughtfulness is carried through in the extensive beer and wine lists. If it is on the menu, it will pair nicely with anything else offered at Chuckie Pies."
