Jennifer and Jeff DuPont, left, owners of WWR Smokehouse, with employee Yolanda Jaimes.Seeing the need for a community butcher shop, Jeff and Jennifer DuPont opened WWR Smokehouse and Foods this August in the Madras Industrial Park.

Jeff DuPont previously owned Wild Winds Ranch hunting and fishing lodge in Grass Valley for 15 years, and has been making sausage and jerky for himself and family members for 30 years.

“For years, I’ve thought I’d like to own a little butcher shop. Then I looked at this place and decided to purchase it,” he said.

Located at 1891 N.W. Mill St., across from Madras Sanitary’s recycling center, the facility has a long history of meat processing. It was previously owned by Jim and Rose Erro as Double E Meats. They sold it to employee Yolanda Jaimes and her husband Isidoro, who named it Juniper Foods and operated it for several years before selling it to the DuPonts. Yolanda, who has 12 years of experience in the business, is still employed by the DuPonts.

On their Madras farm, the DuPonts raise hay and Black Angus cattle. “We raise natural grass-fed beef, with no hormones,” Jeff DuPont said.

“We will eventually be selling that beef retail, and will team up with other local ranchers to sell farm fresh products. We’re looking forward to growing with the community and plan to remodel so we can have more retail space,” Jennifer DuPont said.

He said they want to bring back the customer service and community atmosphere of an old-time butcher shop, where customers are always greeted with a smile.

“Our biggest emphasis is that we make all our own bacon, ham, pepperoni, jerky and summer sausage,” Jeff said.

In addition to smoked meats, WWR Smokehouse offers a full line of frozen seafood including scallops, king crab, and halibut; beef steaks, ribs and roasts; pork, chicken, quail, and more.

In the future, the DuPonts want to expand the retail area to include meat rubs and spices, barbecue sauces, high quality butcher knives and grilling utensils.

In the meantime, Jeff is enjoying being a butcher and offering his specialties to the public. “Anything that can be smoked, I love to do,” he said. – Susan Matheny
